Bar Sanctum

Bar Sanctum is a wine, cocktail and tapas bar at Avenida Revolución 56, a block off the plaza. The kitchen borrows from Spain, Japan and Mexico, so one table might share Galician-style octopus, tuna tataki and a Spanish potato tortilla. The albóndiga, a beef and bacon meatball, arrives in a smoky tomato broth with panela cheese. The bar claims the longest wine list in town, from Mexican Nebbiolo to Hungarian Riesling. Spirits include tequila, mezcal and raicilla, an agave liquor whose protected origin zone includes Bahía de Banderas, the municipality Sayulita sits in. Cuba is the other thread. Owner John DeCosta, born in London, has spent more than 25 years in the Cuban cigar trade, and smokers get their own air-conditioned room, closed off from the bar by glass. Cuban beer and rum are on hand, and one reviewer calls the Old Cuban, made with rum, mint, lime and bitters, the house drink. Some nights bring live jazz, blues or Moroccan music. Reviewers find it a quiet, grown-up break from the party streets. The bar's own site lists Thursday to Saturday, 6 p.m. to midnight, but other listings show more nights, so message ahead.
