We’ve got 10 taquerías and taco stands on the map, and between them they run the whole day. The first comal is hot by eight-thirty in the morning and the last trompo is still turning at three the next. No single place does that, which is the thing worth knowing: the taco day here is a relay.

Naty’s Cocina on Calle Marlín takes the morning and is gone by mid-afternoon. El Itacate on Revolución opens at lunch. Taquería Los Reyes, over the river, does not light its charcoal until the sun is going down. Tacos Díaz, a minute off the plaza, keeps going long after everything else has given up.

Finding them is easy. Three sit on Avenida Revolución, the street you drove in on. One is by the plaza and one sits under big trees down by the river. There is a food truck out on Playa Azul, and one more over the bridge on the north side. Bring pesos, walk slowly, and don’t stop at one.

Get the Fish Tacos

The fish tacos come from 4 of them, working the morning’s catch, and that is the whole argument for eating tacos here rather than inland. The fish comes off the same coast you can see from the end of the street. Battered, fried, cabbage, crema, a squeeze of lime, gone in about four bites.

Shrimp costs a little more and earns it. Marlin turns up on a board or two, which is a Nayarit habit you will not find much further south. William’s on Revolución goes furthest with it: the chalkboard runs past tacos into pescado zarandeado, aguachile and ceviche, the same fish handled three other ways. Go at lunch. You Will Eat Well Without the Meat

7 of them put something vegetarian or vegan on the board, which is more than most people expect of a format built around a grill. Nopales, beans, potato, mushroom, a battered vegetable, same tortilla off the same comal.

Two do more than substitute. Naty’s cooks from family recipes and the dishes people come back for have no meat in them anyway: the mole, and rajas con elote. La Fogonera, the food truck on Playa Azul, makes a hibiscus-and-zucchini patty with its own regulars. The Easiest Dinner You Will Have With Kids

A taquería is the simplest meal in town with children. The tables are outside and the food lands in about a minute. There is always a plain quesadilla when nothing else appeals. And the check is small enough that an untouched plate doesn’t matter.

Sort the money out first. Naty’s Cocina, Carnitas Sayulita and William’s take cash only, and the walk back to an ATM with a hungry four-year-old is the avoidable part of this. For room to park a stroller, Naty’s has picnic tables straight out on the sidewalk of Calle Marlín and Carnitas sits under big trees by the river. Both beat the narrow lanes around the plaza.

The Taco at the End of the Night

At midnight, 2 of them are still cooking, doing a job no restaurant in town does. The dining rooms have shut their kitchens and the bars are only pouring. Tacos Díaz, a minute off the plaza, goes furthest into the night. The trompo turns the whole time, so the al pastor at one in the morning comes off the same spit as the one at six in the evening. Work through the salsa bar while you decide how many more you want. Taquería Los Reyes, over the river, cooks over charcoal on handmade tortillas until around midnight.
