Tortillería Calamar

Tortillería Calamar is a neighborhood tortillería at Avenida Revolución 63 in central Sayulita, a few minutes on foot from the town plaza. A Mexican business directory classifies it as a maker of corn tortillas that also mills nixtamal, and lists it as a small operation with a handful of staff, first registered in 2013. Tortillas and masa are made by hand and sold fresh every day, and walk-in customers are served in Spanish at the counter. Nixtamal is the starting point of a proper corn tortilla: dried corn is cooked and steeped in water with cal, or slaked lime, then rinsed, hulled and ground into masa, a method with roots in ancient Mesoamerica.
