Sayulita Café Casa del Chile Relleno

Sayulita Café, also called Casa del Chile Relleno, sits on Avenida Revolución, one block short of the main plaza. It dates to the early 2000s: Sayulita Life lists it as open since 2001, while the restaurant's own Instagram says 2002. The signature dish is in the name. A chile relleno is a stuffed pepper, most often a poblano, the mild green chile tied to Puebla. In Mexico it is usually filled with melted cheese or a spiced minced-meat mix called picadillo, often dipped in a whipped egg batter and fried, then served in tomato sauce. The café's Instagram calls its version the original, and recent Sayulita Life reviewers single it out. The rest of the menu covers fajitas, which reviewers say are set alight at the table, plus nachos, seafood and molcajete. That last dish is named for the three-legged volcanic stone mortar it is served in; the stone holds heat, so food often keeps bubbling.
